'Mumbai style Indo Chinese Chicken Manchurian Ingredients 1 kg Boneless chicken (we use chicken thighs) 1/4 - 1/2 cup of Beef or Chicken Broth. If you do not have broth then you can take a cup of hot water and add 1 cube of of Maggi chicken stock, crushed by the back of your spoon. If you do not have this either then simply use water. 2 bunches of Spring Onions 2 Onions 7-12 Green Chillies 2 inches Ginger 1 pod of Garlic 1-2 tsp Pepper powder 1 tsp Red Chilli powder 1/2 tsp Cinnamon powder 2 -3 tbsp Oil 6 -8 tbsp Soya sauce 1 tbsp Red Chilli Sauce 2 tbsp Sambal sauce 1 egg 3 tbsp Rice Flour Salt to taste Preparation Chop the white part of the spring onions finely and keep them separately from the dark green parts that are roughly chopped. Cut the onions in 1” cubes. Also slice the Green Chillies and chop Cilantro and Ginger-Garlic and keep aside (you can also coarsely grind the ginger and garlic). Fried chicken (the whole process is shown on our channel in “How to make Indo Chinese Schezwan Noodles”): Cut the chicken into cubes & mix with 1 egg, rice flour, salt to taste and red Chilli powder or Black pepper powder (we used red chilli powder). Then in a fry pan add 3 tbsp oil and add some to the chicken pieces all in one layer. Fry for 3-4 minutes on both sides. The chicken does not need to be completely cooked. The chicken just needs to get a fried coating on both sides. Fry all and keep aside. Process In a wok add 3 tbsp Oil and turn the gas on high. Once the oil is hot, add chopped garlic and sauté for 30 seconds to a minute. Then add the white part of the spring onions and the cubed onions. Sauté well and separate the layers of the onions with the back of your spoon. Then add some salt, ginger, garlic and fry well. After a couple of minutes, Add salt, Pepper powder and cinnamon powder and mix well. The. Add Chopped green chillies and stir well for 30 seconds and 1/4 -1/2 cup of water and stir so the spices don’t burn or stick. Turn the gas to Medium mark. Add the Red Chilli Sauce, Sambal sauce, soya sauce and 1/4-1/2 cup of Broth or water so that there is enough of sauce for the chicken to cook. So stir and then add the fried chicken pieces and add the Dark green part of the spring onions. Add some water and Mix well to coat all the chicken with the sauce and then cover and cook on medium gas mark for 5 minutes. Open the lid and stir, You will be able to tell that the chicken is all cooked. If you want it to have more gravy you Cana do 1/4 - 1/2 cup of water and stir. We wanted a thick gravy so kept it uncovered on high gas mark for a 3-4 minutes and then turned the gas to Medium mark and left it till it almost dries up (maybe 2-3 minutes).
